1: Preheat oven to 425°F and spray a baking rack with cooking spray or line with parchment. 2: Blitz panko in a blender until fine, then add to a medium bowl with Italian seasoning, garlic powder, and 1 tsp salt. Mix well. 3: In a separate bowl, whisk the eggs together. 4: Season cod filets with salt, dredge in panko, shake off excess, then dredge in egg, allowing excess egg to drip off. 5: Dredge cod filets in panko once more and transfer to the baking rack. 6: Spray fish generously with cooking spray to help it crisp up in the oven. 7: Bake for 13-15 minutes until cooked through, optionally broil for the last 2 minutes for a deeper golden color. 8: To make tartar sauce, combine mayonnaise, dill, pickles, pickle juice, lemon juice, and 0.25 tsp salt in a small bowl and mix well.
