A delicious and easy salmon dish that's perfect for dinner or entertaining. Marinate the salmon ahead of time and finish it off under the broiler for crispy edges. Serve with a fresh serrano topping for added flavor.
Add thinly sliced serrano peppers to a small bowl and pour over apple cider vinegar until fully submerged. Let the peppers pickle while preparing the rest of the meal.
In a medium-sized bowl, whisk together soy sauce, honey, sriracha, juice of one lime, and garlic until fully combined.
Pour the marinade into a large baking dish and place the salmon in, skin side up (flesh submerged in the sauce). Marinate for at least 30 minutes up to several hours.
Preheat the oven to 375°F. Line a baking sheet with parchment paper and place the salmon on top skin side down. Pour the marinade over the top.
Bake for 20-25 minutes until cooked to medium.
Turn the broiler on to high and move the fish to a rack ⅔ way up your oven. Broil until lightly charred and crispy in areas, about 4-5 minutes.
To make the serrano topping, drain the pickled peppers and add to a medium-sized bowl along with scallions, chives, juice of half a lime, and ¼ cup olive oil. Mix well and season with salt to taste.
Serve the salmon with a lime wedge and scallion serrano mix on top.
