A healthier take on salt and vinegar chips made with just russet potatoes, apple cider vinegar, and avocado oil. These chips are crispy, flavorful, and easy to make, perfect for a guilt-free snack.
 Wash and dry the potatoes.
Thinly slice the potatoes with a mandoline on the lowest setting.
Transfer the potato slices to a bowl and add apple cider vinegar until they are fully submerged. Allow them to soak for two to three hours.
Remove the potatoes from the vinegar and transfer them to a paper towel-lined baking sheet in rows to dry off before cooking.
Heat avocado oil in a pot over medium-high heat.
Add the potatoes to the oil a handful at a time and let them cook until golden brown, about 5 minutes, flipping once midway through.
Remove from oil and place back on a clean paper towel-lined baking sheet. Sprinkle with salt while they are still hot.
