The juiciest and most flavorful turkey meatballs served with a slightly spicy romesco dipping sauce. Inspired by @erewhon turkey meatballs in vodka sauce, this dish is super easy to make and is both gluten and dairy free.
Combine ground turkey, parsley, garlic, eggs, panko, and milk in a large bowl and mix well.
Oil hands with olive oil, then shape the mixture into medium-sized meatballs, about the size of your palm.
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add meatballs to the hot oil in batches and cook until golden brown on all sides, turning regularly.
Remove from the pan and set aside on a paper towel lined plate.
For the romesco sauce, add roasted red peppers, sundried tomatoes, canned tomatoes, garlic, almonds, vinegar, paprika, and salt to a food processor and blend until finely chopped.
Slowly add ½ cup olive oil while blending to make a smooth sauce.
Spread the sauce on the bottom of your serving dish, then stack the meatballs on top.
Garnish with fresh parsley and flaky sea salt.
