Margherita Pizza

1: Combine dough ingredients in a stand mixer bowl and mix on medium speed for 10 minutes.

2: Cover and let the dough rise until it doubles in size, about 1-2 hours.

3: For the sauce, blend all sauce ingredients in a food processor or high-speed blender until smooth.

4: Once the dough has proofed, lightly oil hands and turn out dough onto a floured surface.

5: Divide the dough into three equal portions and shape each into a ball. Cover with a towel and let rest for 10 minutes.

6: Preheat the oven to 500°F, leaving the pizza stone in the oven while it preheats.

7: Dust a sheet of aluminum foil with cornmeal and place the dough in the center.

8: Using oiled hands, press the dough out to a 10-12 inch diameter, being careful not to tear it.

9: Top the pizza with ½ cup of sauce, fresh basil, and mozzarella.

10: Drizzle olive oil over the top, transfer to the oven on the aluminum foil, and bake for 16-18 minutes until golden brown.
