A popular seafood recipe featuring black cod marinated in a sweet and savory miso mixture. This dish cooks in under 15 minutes, offering a mouthwatering flavor that's hard to resist.
Combine sugar, mirin, miso, rice wine vinegar and water in a small sauce pan over medium heat. Allow marinade to simmer for several minutes, stirring constantly, until sugar is dissolved.
Remove from heat and allow marinade to cool before applying to fish.
Add fish to a nonreactive bowl or tupperware and coat evenly with the cooled miso mixture. Cover and let marinade for 48 hours.
To cook, preheat oven to 350°F.
Remove fish from tupperware and scrape off excess marinade, then pat fish dry with a paper towel.
Bake on middle rack in the oven for 7 minutes.
Transfer to the highest rack and broil on high for 5 minutes, or until fish looks charred and blackened on top.
