10 mins prepServes 2
A simple and flavorful dish featuring seared halibut served over herbed cannellini beans. The beans are simmered with garlic, tomatoes, and fresh herbs, making for a healthy and satisfying dinner.
1: In a medium saucepan over medium heat, combine olive oil and cherry tomatoes. Cook until the tomatoes burst and juices begin to simmer.
2: Reduce heat to low, stir in cannellini beans, bone broth, minced garlic, thyme, parsley, lemon zest, lemon juice, and a pinch of aleppo pepper. Season with salt and continue cooking for an additional 2-3 minutes until soupy.
3: Season halibut with salt and pepper. Grease a large skillet with 1 tbsp avocado oil, line with parchment paper, and grease the top with remaining avocado oil. Heat over medium heat.
4: Add the halibut to the hot pan and cook undisturbed, about 4 minutes per side, until golden brown and flaky.
5: Serve the halibut on top of herby beans and garnish with parsley, aleppo pepper, and grilled lemon half.
