These steamed rice paper dumplings are gluten-free, filled with flavorful shrimp, ginger, and garlic. The chewy rice paper wrapper is a light alternative to traditional dumplings, perfect for a delicious meal served with a spicy dipping sauce.
In a medium bowl, combine the chili crisp, rice vinegar, tamari, grated garlic, coconut sugar, green onions, cilantro, and avocado oil. Whisk until combined to make the sauce.
In another bowl, mix the minced shrimp, ginger, garlic, chives, tamari, arrowroot, and pepper to create the dumpling filling.
Fill a large bowl with water and wet a cutting board. Line a steaming basket or plate with parchment paper and spray with nonstick spray.
Dip a piece of rice paper into the water bowl for 5-10 seconds until it softens. Place it on the cutting board.
Fold in all four edges of the rice paper to form a square.
Add 1 heaping tablespoon of filling to the center and fold the corners inward, pressing to seal the dumpling.
Transfer the dumpling to the steaming basket and repeat with the remaining rice paper and filling.
To steam, bring 2 inches of water to a boil in a large pot. Steam for 10 minutes.
Serve the dumplings with the prepared dipping sauce.
