A simple and delicious recipe for lamb rib chops seasoned with thyme and garlic, perfect for any dinner. The lamb is easy to prepare and is a favorite among family, including kids.
Remove lamb chops from the refrigerator 30 minutes prior to cooking to allow them to come to room temperature.
Pat meat dry with a paper towel to remove excess water.
Season lamb chops generously with coarse salt and pepper.
Heat a cast iron skillet on medium high heat and place lamb chops narrow fat side down.
Allow the fat to render and the back of the chop to brown before flipping to one side.
Brown both sides of the lamb chops, around 5 minutes per side.
Add ghee, thyme, and garlic, then reduce heat to medium low to prevent the garlic from burning.
Baste with sauce and cook for an additional one to two minutes.
Remove from heat and allow to rest.
Save the excess sauce to drizzle over the meat when serving.
