These Vegan Lace Cookies are gluten-free and dairy-free, made with just 6 simple ingredients. Perfect for gifting and as an addition to any dessert spread. They have a delightful taste enhanced with chocolate coating and flaky sea salt.
 Preheat oven to 350°F.
Add coconut oil to a saucepan over medium low heat until melted.
Once melted, add coconut sugar, almond flour, almond milk, and salt. Take the pan off heat and whisk well to combine.
Whisk vigorously for a few minutes to reincorporate any separated fat from the coconut oil, adding 1 tbsp water and returning to low heat if necessary.
Once batter is smooth, whisk in vanilla extract and let it cool for 15 minutes.
Use a teaspoon to scoop the batter onto a parchment-lined baking sheet, leaving about 3 inches of space between each cookie.
Refrigerate dough between batches if possible.
Bake for 6-8 minutes until bubbling in the center, then remove from the oven and let cool completely.
Melt chocolate and remaining coconut oil over medium low heat, being careful not to scorch.
Pour melted chocolate onto a plate and dip half of the cookies into it; top with another cookie for a sandwich or drizzle over top.
 Finish with flaky sea salt.
